Why This Recipe is So Good
- Air fryer baked sweet potatoes are MUCH quicker to make than in the oven. The best part about a baked sweet potato is how sweet and caramelized it gets in the oven, but it can take what seems like forever to get there. By cooking them in the air fryer you can cut down on your cooking time by half.
- Easy and simple side dish. It doesn’t take much time at all to pop these sweet potatoes in the air fryer to serve alongside an Oven Roasted Whole Duck, or Dutch Oven Whole Roast Chicken paired with Roasted Brussels Sprouts and Mushrooms and Baked Mac and Cheese for a filling and comforting fall or holiday dinner.
- Serve baked sweet potatoes with whipped cinnamon butter and a sprinkle of ground cinnamon or use leftover sweet potatoes to make sweet potato pie, Sweet Potato Overnight Oats, Sweet Potato Cornbread, or Ninja Creami Sweet Potato Ice Cream.
Recipe Ingredients
- Sweet potatoes – Look for potatoes with firm skin. You don’t want any wrinkles or soft spots which means they have gone bad. I like using Beauregard, Covington, Jewel, or Red Garnet sweet potato varieties – they are moist and sweet.
- Olive oil (optional) – A little bit is rubbed on the potatoes to crisp up the skin as it cooks.
- Cinnamon butter – This is made by whipping softened butter with ground cinnamon, brown sugar and a pinch of salt. You could top your baked potatoes with maple syrup, and salt, or enjoy them plain.

Notes
How To Store/ Make Ahead
- Store: In the fridge for up to 3-4 days in an air-tight container or plastic storage bag.
- Freeze: Store cooled sweet potatoes(I like to peel them first) in a freezer-safe container or plastic bag for up to 3 months. Thaw on the counter or in the refrigerator to use in recipes or to add to soups or stews.
Tips and Tricks
- Crispy skin: Rub sweet potatoes with a little bit of olive oil and salt before air frying.
- Use potatoes that are the same size and shape so they will cook at the same rate.
- Leave room: Don’t crowd your air fryer, make sure to leave room around each one so all your potatoes will cook evenly and achieve a crisp exterior.
- Serve potatoes sweet or savory: For sweet: serve topped with whipped cinnamon butter or a sprinkle of brown sugar or drizzle of maple syrup. For savory, serve topped with black beans, corn, sour cream, and diced avocado.
- Leftovers: Make sweet potato pie, Sweet Potato Overnight Oats, sweet potato cornbread, or Ninja Creami Sweet Potato Ice Cream.
