Why This Recipe is So Good
- Brown sugar vanilla syrup is the boojue upgrade from regular vanilla syrup. Brown sugar truly makes everything better because of its extra richness from the molasses. The rich vanilla bean paste mixed with the brown sugar makes your whole house smell amazing as it cooks and turns every drink into a coffee shop-worthy one!
- Simple syrups are made from a 1:1 ratio of sweetener(sugar or honey) and water. This neutral-tasting liquid sweetener makes sweetening your drinks so much easier since you don’t have to worry about sugar crystals at the bottom of your cup. You can flavor them with pretty much whatever you like – fruit, herbs, spices, or vanilla!
- Ways to use up this brown sugar syrup: in your iced coffee, oat milk matcha lattes, or tea. Swap out the sugar in this Iced Matcha Chai Latte or this Iced Vanilla Matcha Latte for this brown sugar syrup – it will be chef’s kiss. Or even add a bit to your morning oatmeal or this Pumpkin Spice Oatmeal.
Recipe Ingredients

Brown sugar – The rich molasses-y flavor of brown sugar pairs so well with the vanilla. White granulated sugar or cane sugar can be used instead.
Vanilla – Vanilla bean paste with the vanilla specks has a much stronger and bolder vanilla flavor and will make this syrup the best. Pure vanilla extract or a whole vanilla bean split in half can be used as well.
Filtered water – Combined with the sugar to make a simple syrup.

Notes
How To Store/ Make Ahead
Store in an air-tight jar in the fridge for up to 2 weeks. If there is anything growing on the surface of the syrup, or if it starts to smell bad or taste weird, throw it out.Tips and Tricks
- Depending on how long you simmered the syrup, it will thicken as it cools. It’s still completely fine to use.
- Don’t boil. Try not to allow the syrup to come to boil, otherwise the sugars can caramelize and make the syrup way too thick.
- If you don’t have brown sugar, use ½ – 1 teaspoon of molasses and regular white granulated sugar or cane sugar. Or simply use white or cane sugar.
- Add cinnamon. ¼ – ½ teaspoon of ground cinnamon or simmer the syrup with 1 – 2 cinnamon sticks(steep for 10 – 15 minutes to infuse the flavor better).
