This fun pink colored Dragon Fruit Simple Syrup is made with 3 ingredients. Dragon fruit doesn’t have much of a flavor so this fruit flavored simple syrup is mildly fruity, but has a gorgeous pink/purple color. This recipe uses frozen dragon fruit and it’s ready in just a few minutes! Use it to make this Dragon Fruit Mocktail next!

Why This Recipe is So Good 

  • Dragon fruit or pitaya is a tropical fruit native to Central and South America. It has a vibrant hot pink colored skin with white flesh and black seeds. It’s juicy, mildly fruity with a hint of kiwi flavor.
  • This recipe is made with frozen pink dragon fruit, I used these packets so I don’t have to cut or deal with fresh fruit.
  • This dragon fruit syrup makes the best dragon fruit flavored drinks without any dyes or artificial flavors! It’s pink color and slight tropical flavor combined with lime juice makes a tasty and refreshing mocktail or mix it with lemon juice to make a pitcher of Dragon Fruit Lemonade.

Water and sugar – equal amounts of water and sugar is heated on the stove to create a simple syrup. White granulated sugar, cane sugar or even honey can be used as a sweetener. 

Frozen dragon fruit puree – You can find frozen dragon fruit in pretty much any store in the frozen fruit section. 

How to Make Dragon Fruit Syrup

All ingredients, measurements, and instructions are in the recipe card at the bottom of this post.

Add frozen dragon fruit, water and sugar into the medium sauce pot. Heat on medium heat until the syrup comes to a gentle boil. Whisk occasionally to break up the frozen dragon fruit. 

Allow the syrup to cool for 30 minutes, covered, then strain out the seeds using a fine mesh strainer.

Tips and Tricks

Make sugar-free dragon fruit syrup by replacing the sugar with honey. If using honey, only cook the syrup until the honey has melted. 

Ways to use this syrup: Make dragon fruit lemonade or limeade by combining 1 cup of lemon or lime juice with 2 cups water and 1 cup syrup, serve over ice. Or enjoy as a mocktail with a squeeze of lime juice and sparkling water. 

Use this fruity syrup to sweeten iced tea or add a bit to a glass of sparkling water.

  • Add 1 cup cane sugar, 1 cup filtered water, and 100 grams frozen dragon fruit puree into a medium sauce pot. Bring to a gentle boil on medium heat, this takes about 10 – 15 minutes. Stir occasionally to break up the frozen dragon fruit puree.
  • Remove the pot from the heat, then allow the syrup to cool for 30 minutes. The syrup will thicken as it cools.
  • Strain out the seeds using a fine mesh strainer. If you are going to use this syrup for mocktails, I like to leave a few seeds in the syrup.
  • Store in an air-tight container in the fridge for up to 2 weeks.
