If you are using dry beans, start by picking out any bad ones and rinsing them. You can cook the beans on the stove (~ 2- 3 hours ) or in an Instant pot (~ 35 minutes).  After the beans are cooked, drain them and set them aside.

First, on medium heat, cook the sliced onions with butter and ¼ teaspoon of salt. The salt helps to bring the water out of the onions and allows them to caramelize. Cook the onions until they are translucent.

Next, add in the sliced mushrooms. Cook until they start to brown and the onions are soft and caramelized. Cook the minced garlic with the mushrooms and onions for 2 minutes to bring out its flavor. Set it aside.

In a food processor, add the cooked black beans (reserving ¼ cup ), and sauteed mushrooms and onions. Pulse for 30 seconds to mix everything together. Don’t blend the bean mixture too much, you want a chunky texture.

In a large bowl, mix together the bean mixture, the reserved beans, flour, a beaten egg, and spices.
