These ground beef enchiladas with a homemade red sauce are easy to make and so full of flavor! They have ground beef with chopped onions and jalapenos, tender black beans, wrapped in a flour tortilla covered with homemade red sauce, and melty cheddar cheese.
This dinner is easy, delicious, and comforting, made in under an hour, and makes for the best leftovers! This is one of our favorite Mexican recipes, and I’m sure it’s one that your family will love as well.
Ingredients you will need for the best ground beef enchiladas
Ground beef or bison
- You will need 1lb of lean organic ground beef or bison. They taste pretty much the same so use whichever you have!
Chopped Onions, Garlic, Jalapenos, and Spices
- These are the aromatics that make these enchiladas the best, don’t skimp on the seasonings!
Shredded Cheddar Cheese
- Add lots of shredded cheese on top for maximum goodness! A mix of white cheddar and pepper jack cheeses would be delicious as well!
Black Beans
- The black beans makes these enchiladas more hearty and filling! You could also make this recipe vegetarian by replacing the meat with more black beans and cheese.
Flour Tortillas
- There’s nothing like flour tortillas made from scratch! If you want to make them yourself - check out this easy recipe for Homemade Flour Tortillas or use store bought if you prefer.
Homemade Red Sauce
- The one thing I wouldn’t recommend using store-bought is the red sauce. This Homemade Enchilada Sauce is quick and easy to make and is so full of flavor!

How Do you Make Beef Enchiladas Not Soggy?
The key to making beef enchiladas not soggy is not using too much sauce. This recipe uses 16oz of homemade red sauce and it is the perfect amount to add lots of flavor to the enchiladas without drowning them in sauce, and therefore making them soggy.

Description

Ingredients
- 4 tablespoon ghee or vegetable oil
- 1 medium onion, chopped
- 1lb ground beef or bison
- ¾ teaspoon salt
- ½ teaspoon ground black pepper
- 1 teaspoon dried oregano
- 1 ½ teaspoon ground cumin
- 1 teaspoon chili powder
- 1 pinch cayenne pepper
- ½ teaspoon ground paprika
- 3 - 4 cloves garlic, minced
- 2 - 3 jalapenos, ribs and seeds removed, chopped
- 16 oz red enchilada sauce
- 16 oz shredded cheddar cheese
- ¾ cup cooked black beans
- 6 flour tortillas
Instructions
- Preheat the oven to 400F.
- Heat a large cast-iron skillet with ghee. Add the chopped onions and cook until they just start to soften and turn translucent, 5 minutes.
- Add in the ground beef or bison and all the spices - salt, pepper, dried oregano, ground cumin, chili powder, cayenne pepper, and ground paprika. Mix until everything is well combined. Cook until the meat is brown, 10 minutes. Next, add in the minced garlic and cook it for 30 seconds - 1 minute to gently cook the garlic. Remove the meat from the heat, then add in the chopped jalapenos and cooked and drained black beans. Mix then set aside.
- To the bottom of a 9x13 inch baking pan, add ½ cup of the enchiladas sauce. To one tortilla add 1 tablespoon of enchilada sauce, a few tablespoons of shredded cheese, and the meat and bean mixture. Roll the tortilla up and place it seam-side down in the pan. Repeat with the rest of the tortillas.
- Once all the tortillas are rolled up, cover them with the rest of the enchilada sauce and shredded cheese.
- Bake in a 400F oven for 25 - 30 minutes, or until the cheese is golden brown and bubbly.
- Serve with sour cream, black beans, and cilantro or parsley! Enjoy!
