Description
These ground beef enchiladas with a homemade red sauce are easy to make and so full of flavor! They have ground beef with chopped onions and jalapenos, tender black beans, wrapped in a flour tortilla covered with homemade red sauce, and melty cheddar cheese.

- 4 tablespoon ghee or vegetable oil
- 1 medium onion, chopped
- 1lb ground beef or bison
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon dried oregano
- 1 1/2 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 pinch cayenne pepper
- 1/2 teaspoon ground paprika
- 3 - 4 cloves garlic, minced
- 2 - 3 jalapenos, ribs and seeds removed, chopped
- 16 oz red enchilada sauce
- 16 oz shredded cheddar cheese
- 3/4 cup cooked black beans
- 6 flour tortillas
Instructions
- Preheat the oven to 400F.
- Heat a large cast-iron skillet with ghee. Add the chopped onions and cook until they just start to soften and turn translucent, 5 minutes.
- Add in the ground beef or bison and all the spices - salt, pepper, dried oregano, ground cumin, chili powder, cayenne pepper, and ground paprika. Mix until everything is well combined. Cook until the meat is brown, 10 minutes. Next, add in the minced garlic and cook it for 30 seconds - 1 minute to gently cook the garlic. Remove the meat from the heat, then add in the chopped jalapenos and cooked and drained black beans. Mix then set aside.
- To the bottom of a 9x13 inch baking pan, add ½ cup of the enchiladas sauce. To one tortilla add 1 tablespoon of enchilada sauce, a few tablespoons of shredded cheese, and the meat and bean mixture. Roll the tortilla up and place it seam-side down in the pan. Repeat with the rest of the tortillas.
- Once all the tortillas are rolled up, cover them with the rest of the enchilada sauce and shredded cheese.
- Bake in a 400F oven for 25 - 30 minutes, or until the cheese is golden brown and bubbly.
- Serve with sour cream, black beans, and cilantro or parsley! Enjoy!
