Why This Recipe is So Good 

It’s sugar free and naturally sweetened. Most simple syrups are made with white granulated sugar or cane sugar and not only is honey more natural to use but it gives the syrup an extra delicious flavor. 

This lavender infused honey syrup can really be used to flavor ALL of your favorite drinks. Starbucks’ lavender drinks are really popular right now, so use this honey lavender syrup to make your own iced lavender oat milk latte or my favorite iced lavender cream oat milk matcha latte. Make a honey lavender mocktail or use it to flavor lemonade or sparkling water. 

Honey-based simple syrups have sooo much more flavor than traditional simple syrup made with sugar. If you love the taste of honey, then this syrup is great to have on hand to flavor your favorite drinks. In addition to lavender, you could infuse blueberries, vanilla bean paste, lemon juice, fresh mint, or even rosemary.

Dried lavender buds – Use dried culinary lavender buds (preferably organic, too!). 

Honey – Naturally sweetened the lavender syrup. Raw, local honey is always the best to use. It contains many more nutrients than processed honey, and it can be more flavorful! Wildflower honey and clover honey are popular choices but use the honey you enjoy the flavor of.

Water – Mixed with the honey to make the simple syrup. 

How to Make Honey Lavender Simple Syrup

All ingredients, measurements, and instructions are in the recipe card at the bottom of this post.

  1. Add honey, water, and dried lavender buds to a small sauce pot. 
  2. Bring the mixture to a gentle simmer on medium-low heat for about 5 – 10 minutes. Remove from the heat, cover the pot, then allow your syrup to steep for 30 minutes. 
  3. Strain syrup into a bowl using a fine mesh strainer. Gently press the lavender buds with a spoon to release even more of the lavender flavor, then allow it to cool to room temperature. Refrigerate until you’re ready to use it.

Ingredients

  • ½ cup raw honey wildflower or clover
  • ½ cup Filtered water
  • 1 tablespoon Dried lavender buds culinary grade

Instructions 

  • Add honey, water, and dried lavender buds to a small sauce pot.
  • Bring the mixture to a gentle simmer on medium-low heat this takes about 5 – 10 minutes. You just want to melt the honey. Remove the pot from the heat, cover with a lid, then allow your syrup to steep for 30 minutes.
  • Strain syrup into a bowl using a fine mesh strainer. Gently press the lavender buds with a spoon to release even more of the lavender flavor, then allow it to cool to room temperature. Refrigerate until you’re ready to use it.

Notes

Yields: 1 cup of lavender syrup.

How To Store/ Make Ahead

This honey lavender syrup be stored in the fridge in an airtight container for up to 2 weeks. If you see any since of mold or something off, discard the syrup. 
Uses for lavender simple syrup: Mix into coffee drinks, hot or iced tea, matcha, lemonade, or use it to make mocktails.
