A few years ago I was vegetarian for a bit- partly because I didn’t like beef at the time and I kept getting sick from chicken.
I’m grateful to God that this doesn’t happen anymore!
But when I was vegetarian this linguine with red cabbage and kale pasta was one of my favorite go-to dishes. I love how easy it is to make with only pasta, red cabbage, kale, olive oil, salt, and pepper.
Linguine Pasta
This recipe uses linguine pasta, but you could use spaghetti, fettuccine, penne, or whatever type of pasta you have in your pantry!
Red Cabbage
Red cabbage is fun, slightly crunchy, and vibrant in color. It doesn’t get as soft as green cabbage does when you saute it. However, the tender but slightly crunchy red cabbage pairs wonderfully with the sauteed kale and pasta.
Kale
Kale is one of those vegetables that many people either really love or hate. But I found that even if you don’t like kale - if it is sauteed with olive oil, salt, and pepper, you might like it better!
The combination of the sauteed red cabbage and kale really makes this dish amazing.
Olive Oil
A good quality olive oil adds that slightly spicy tangy taste that only olive oil can provide. I don’t like to use a neutral-tasting oil for this recipe because you want to taste the oil that you cook the vegetables in.
I normally cook with homemade Ghee because it has a high smoke point, making it ideal for sauteing. You also don’t have to worry about the oil burning while you’re cooking. However, this recipe is one of the few cases where I do prefer to use olive oil instead.

Linguine with Red Cabbage and Kale

Description
Linguine with sauteed red cabbage and kale is the perfect vegetarian comfort pasta dish! It has tender sauteed red cabbage and kale with linguine pasta tossed with olive oil, salt, and freshly ground black pepper.
Ingredients

4 oz linguine pasta

4 cups kale, chopped with the stems removed (about half a bundle of kale)

2 cups red cabbage, shredded

5 tablespoons olive oil
-
½ teaspoon salt
-
¼ teaspoon freshly ground black pepper
Instructions

Boil the pasta in a medium-sized pot according to the package instructions.

While the pasta is boiling, saute the red cabbage and kale in a large skillet with olive oil and salt. Cook the cabbage and kale until it is soft and starts to brown, 5 - 7 minutes.

Once the pasta is cooked, drain the pasta and add it to the sauteed cabbage and kale. Mix together, add in the freshly ground black pepper, and taste for seasoning, if necessary. Enjoy!
Notes
You can reheat the linguine with red cabbage and kale pasta covered in the oven.
