It’s made with fresh ingredients – Fresh ginger, mint and lemon juice is truly the secret to the best lemonade. Skip the bottled lemon juice and use fresh mint leaves and ginger to create a flavor-packed drink. 

Mint ginger syrup – This is the key to achieving a strong mint and ginger flavor. Blending the mint will give a weird greenish/brown color to your lemonade, so allowing it to simmer with the syrup flavors the lemonade without changing the color. 

It’s easy to make! This ginger mint lemonade recipe is made with 5 ingredients with minimal effort. You can make the simple syrup ahead of time or make a double batch to store for mocktails. 

Recipe Ingredients

  • Ginger – Look for ginger root that is plump with smooth skin; it shouldn’t be wrinkly or dried out. Since we are straining the syrup peeling is optional, just make sure to wash it really well before chopping. 
  • Mint – Fresh mint leaves are simmered with the ginger to make a simple mint ginger syrup to flavor the lemonade. Look for dark green fresh-looking mint leaves.
  • Lemons – Only use freshly squeezed lemon juice for this lemonade! It will make sooo much difference in the flavor. Use a manual citrus juicer to speed up the juicing process. 
  • Sugar – White granulated sugar or honey. It’s combined with the water to make a simple syrup. 
  • Water – Cold filtered water and ice for serving. 

How to Make Ginger Mint Lemonade

Make mint ginger simple syrup

Prep your ginger – Peel ginger then roughly chop into small pieces. This helps the ginger flavor to release into the simple syrup. 

Prep your mint leaves – Rinse mint leaves then break them into smaller pieces to help release their minty essence into the syrup. 

Add the chopped ginger, mint leaves, sugar and water into a medium sauce pot then stir everything together. Set pot over medium heat then bring mixture up to a boil, reduce the heat down to a simmer then cook for 10 minutes. 

Remove from the heat then cover the pot and allow your syrup to cool for 30 minutes – 1 hour, this helps to infuse the mint and ginger flavors even more into the syrup.

Finally, strain your syrup using a fine mesh strainer set over a pitcher or mason jar.

Make the lemonade

Add 3/4 cup of the syrup to a pitcher with freshly squeezed lemon juice and water. Taste and add more syrup to your liking. Allow the lemonade to chill in the fridge or serve immediately with ice garnished with fresh mint leaves. Enjoy!

Mint ginger syrup

  • 4 ounces fresh ginger root ¼ cup cut into 1-inch pieces, peeled
  • 1 cup granulated sugar
  • ½ cup packed fresh mint leaves
  • 1 cup filtered water

Lemonade

  • 1 cup lemon juice freshly squeezed, about 6-7 lemons
  • 2 – 3 cups water filtered
  • Ice for serving

Instructions 

  • Peel and roughly chop ginger root. Or add to a food processor, which helps to get more of the ginger flavor into the syrup.
  • Place ginger into a medium sauce pot with sugar and mint leaves. Use the back of a knife to muddle the mint leaves or break them up with your hands to release their minty essence, then add the water.
  • Set the pot over medium heat to bring the mixture to boil then reduce the heat down to a simmer for 10 minutes. Remove the pot from the heat, cover it, and then allow it to sit for at least 30 minutes – 1 hour to allow the ginger and mint flavors to infuse into the syrup.
  • Strain your syrup using a fine mesh strainer set over a medium mixing bowl or mason jar.
  • Add 3/4 cup of the syrup to a pitcher with freshly squeezed lemon juice and water. Taste and add more syrup to your liking. Allow the lemonade to chill in the fridge or serve immediately with ice garnished with fresh mint leaves. Enjoy!

Yields: 4- 5 cups of lemonade and 1 ½ cups of mint ginger syrup

How To Store/ Make Ahead

  • Mint Ginger Syrup: Store in an air-tight container for up to 2 weeks.
  • Lemonade: Store in an air-tight container for up to 4 – 5 days, give it a stir before serving. 

Tips and Tricks

  • Roll your lemons on the counter a few times before cutting and juicing to get more juice out of each one. Also, lemons at room temperature release their juice more easily than cold lemons.
  • Don’t add all the mint syrup at once. This makes 1 1/2 cups of syrup; start with 3/4 – 1 cup of syrup, taste, then add more as desired.
  • The ginger syrup will taste really spicy, but this is what we want! Once you combine it with the lemon juice it won’t taste as strong. 
  • Make a mint ginger lemonade mocktail. Replace the water with sparkling water or club soda.
  • Use honey instead of sugar.
