Oven Baked Salmon Bites
Savory and garlicky Oven Baked Salmon Bites are a quick and easy dinner, ready in under 30 minutes. Salmon pieces are marinated with soy sauce, garlic, lemon juice, and seasonings, then broiled until flaky and juicy. Oven baked salmon bites are so incredibly flavorful! These soy-marinated salmon nuggets are savory with tons of garlic and lemon, and the salmon is perfectly flaky and juicy. The marinade is also sugar free. If you are trying to cut back on sugar in your diet, this is a great recipe because it’s so delicious without it!
This recipe is great to meal prep or to make when you can’t be bothered to cook but still want a flavorful and filling meal. Pair the salmon with Roasted Broccoli, couscous, steamed rice or veggies, really anything! Salmon bites reheat really well in the oven and make a delicious high-protein snack as well!

Recipe Ingredients
- Salmon fillets – 4 boneless salmon fillets, about 4 ounces each cut into bite sized pieces.
- Soy sauce – I used liquid aminos, it’s a gluten free soy sauce alternative that has less sodium than regular soy sauce. You can use either one for this recipe.
- Lemon juice – The brightness of the lemon juice helps to balance out all the savory and umami flavors in these salmon bites.
- Seasonings – Ground paprika, cayenne pepper and white pepper. White pepper has a subtle peppery flavor and it works so well with the garlic and soy sauce flavors.
- Oil – Just a bit of olive oil, avocado oil or ghee helps the salmon crisp up in the oven. You could also use a bit of toasted sesame oil for a different flavor.
How to Make Oven Baked Salmon Bites
All ingredients, measurements, and instructions are in the recipe card at the bottom of this post.
Preheat your oven to 450 degrees Fahrenheit. Line a sheet pan with aluminum foil then set aside.
Rinse salmon fillets then pat dry with paper towels. Remove any bones then cut each fillet into bite-sized chunks with a sharp knife.
Add salmon chunks to a large mixing bowl with minced garlic, soy sauce, lemon juice, paprika, white pepper, cayenne pepper, black pepper and olive oil. Stir to combine, then let the salmon marinate for 5 – 10 minutes at room temperature. Use a pair of tongs or a fork to transfer salmon chunks to the prepared sheet pan, leaving 1- 2 inches of space in between each piece of fish.
Bake salmon chunks for 10 minutes. Turn the broiler on HIGH, then broil for another 1 – 2 minutes or until browned and crisp.
Garnish with sliced green onions and sesame seeds, then serve hot with steamed rice and stir-fried veggies. Enjoy!
Tips and Tricks
I found it easier to leave the skin on when cutting the salmon into bite sized pieces. You could ask your fishmonger to cut the skin off for you or use a really sharp knife and do it at home.
There’s no salt in this recipe because soy sauce and liquid aminos are super salty already. If you decide to skip the soy sauce for a different sauce or leave it out entirely, add a little bit of salt to the marinade.
This is a no sugar marinade recipe. Feel free to add a drizzle of honey or 1 tablespoon of brown sugar if you want a little bit of sweetness.

- 2 tablespoons olive oil avocado oil or ghee

Instructions

How To Store/ Make Ahead
