This oven-roasted cauliflower recipe is savory and delicious. The crispy cauliflower florets are heavenly by themselves or as a side for roasted beef or chicken. 

This 4 ingredient oven-roasted cauliflower can be meal prepped at the beginning of the week for an easy side throughout the week.


  • 1 large head of cauliflower, about 8 cups chopped

  • 2 tablespoons ghee or olive oil

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper


  1. Preheat the oven to 400 F degrees. Line a cookie sheet with parchment paper then set it aside.

  2. Rinse and then cut the head of cauliflower in half. Cut the cauliflower into bite-sized pieces. 

  3. Evenly spread the cauliflower florets on the cookie sheet, then drizzle the ghee or olive oil over top with salt and freshly ground black pepper. Mix to coat the cauliflower with the oil. 

  4. Bake for 30 – 40 minutes, or until the edges of the cauliflower florets are brown and the florets are fork-tender. Enjoy!


Oven-roasted cauliflower can be meal prepped in advance and reheated in the oven.

Lasts about a week in the refrigerator.
