Marshmallows
Marshmallows are the star of this show here! I don’t eat pork, and most of the time gelatin is made with pork, so its hard to find marshmallows that use beef or fish gelatin instead.
I found some kosher marshmallows at my local grocery store that work perfectly for this recipe. They are a little pricey but I believe it’s worth it to avoid the pork gelatin. I also like to buy everything organic, but this is one of the only ingredients I use that is not!
They are large marshmallows and I use two 8oz bags for this recipe.

Rice Crispy Cereal
Rice Crispy Cereal is another important part of this treat. For some reason, it’s really hard to find organic rice crispy cereal at my local grocery store. I’ll link the one I use. I use most of the box for this recipe.
Vanilla
I love to add a hint of vanilla flavor to my rice crispy treats. I use real vanilla extract and it’s amazing!

Description

This is the perfect treat to make to give as gifts or as an after-dinner treat with a hot cup of tea!
Ingredients
- 1 stick butter (unsalted)
- 16 oz large Marshmallows (8 cups)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 7 cups rice crispy cereal
Instructions
- Line a 9 x 13 pan with parchment paper, so the rice crispy treats don't stick to the pan, set aside.
- In a large saucepot melt the butter.
- After the butter is melted, add the marshmallows. The marshmallows I use are quite big so they take some time to melt.
Stir consistently for 5 -7 minutes or until the marshmallows are mostly melted. - Remove the pot from the heat, then add the vanilla extract and salt, stir to combine. Then immediately add the rice crispy cereal and stir until all the cereal is coated in the marshmallow mixture.
- Then immediately add the marshmallow/ cereal mixture to the prepared parchment paper lined pan. The marshmallow/cereal mixture will be very sticky.
- Press the cereal down in the pan evenly, then allow to cool completely, 30 minutes – 1 hour.
- Once cool, cut the rice crispy treats into squares and store in an airtight container or plastic bags for 3 – 4 days for peak freshness.
