This strawberry mocktail is sweetened with a homemade basil syrup made with sugar, water, and fresh basil leaves. You can switch up this recipe by using a strawberry basil syrup. Simply add chopped strawberries to the syrup to steep. It will have a gorgeous red color, and it’s a great way to use up fresh fruit and add more berry flavor to the syrup.
Recipe Ingredients
Basil – Steeped with sugar and water to create a savory, sweet and slightly spicy basil simple syrup. Look for bright green fragrant leaves.
Fresh strawberries – A few ripe berries are muddled until juicy to release their flavor into this basil mocktail. You can opt for making a strawberry basil syrup if you don’t make berry chunks in your drink or blend them.
Sparkling water – Chilled club soda or sparkling water steps in for the alcohol in this mocktail recipe.
How to Make a Strawberry Mocktail with Sparkling Water

Make basil syrup:
Rinse and roughly chop basil leaves then add to small saucepot with sugar and water. Bring the mixture up to a gentle simmer on medium heat, this takes about 10 minutes. Cover the pot with a lid then remove from the heat. Allow the basil to steep in the syrup for 30 minutes. Strain out the leaves using a fine mesh strainer then transfer the syrup into a jar. Allow to cool completely
Make a strawberry basil mocktail:
Use a cocktail muddler or wooden spoon to mash the strawberries until juicy. Add the basil syrup, ice then top off with sparkling water. And your strawberry basil drink is done! Stir and enjoy!

Equipment
- 1 Small saucepot
- 1 Chef knife
- 1 Cocktail muddler or wooden spoon
Ingredients
Basil syrup
- ¼ cup fresh basil leaves packed
- ½ cup cane sugar or white granulated sugar
- ½ cup filtered water
Strawberry basil mocktail
- 1 ounce basil syrup or 2 1/2 tablespoons
- 1 – 2 small strawberries
- 4 ounces sparkling water to top off or ½ cup chilled
- Ice for serving
Instructions

- Sparkling water: I love Saratoga Springs sparkling water because it stays fizzy for a while. Wait to pour sparkling water until just before serving to avoid a flat drink.
- Sweetener: Swap out the refined sugar for honey. Honey tends to clump in cold drinks, so make sure to heat the honey until it’s dissolved.
- If you don’t want strawberry chunks in your mocktail, blend them in a blender or mash them to get their juice, then strain out the pulp. Another option can be to steep the strawberries in the syrup with the basil to get their flavor and then discard the berries once cooked.
- Skip the basil syrup to make a delicious strawberry mocktail. Simply make a strawberry syrup by cooking the strawberries in the simple syrup or mash the strawberries with sugar until juicy.
