When my younger sister and I were growing up our favorite summer treat was popsicles. They were soft, fruity, and so fun! Our favorite was the red, white, and blue firecracker popsicles, I loved the different flavors and how they were shaped like a firecracker! 

As we became more health conscious, strawberry popsicles were always high on our list of favorites. They were always so colorful, and fruity. Whenever we made popsicles at home however they never turned out soft, but rock hard. My sister makes smoothie popsicles for my nephew all the time and when she created this recipe for strawberry lemonade popsicles I knew you guys needed it too! 

This recipe is the quickest and easiest way to make popsicles that are healthy, flavorful, and full of fresh fruity flavor. They aren’t icy at all, are firm but soft to bite into, and are literally the best popsicles you will ever eat! And the best part is that they are made of organic whole ingredients, no dyes, colors, fillers, or additives.

How do you make popsicles that aren’t icy?

Icy popsicles are a major problem when making them at home. The key is to not use water. Water when frozen becomes very hard and therefore leads to an icy popsicle. Instead, we use freshly squeezed lemon juice to give that lemonade flavor and to help the strawberries blend better. 

If you are using frozen strawberries I love to rinse them with cold water to get the ice crystals off but also to help soften them slightly so they’ll blend better.

Because these homemade popsicles only require 3 ingredients it’s important to use organic ingredients so you’ll get the best flavor!

  • Strawberries – The base of these homemade ice pops is fruit! I used frozen strawberries, but fresh strawberries would work great as well!
  • Lemon juice – Freshly squeezed lemon juice gives the best bright lemon flavor. We love using our citrus juicer because it makes juicing a lot of lemons sooo much easier. 
  • Cane Sugar – Cane sugar isn’t as processed as white sugar and it adds the perfect amount of sweetness to these lemonade popsicles. 

How to Make Homemade Strawberry Lemonade Popsicles:

Step one: Add all the ingredients into a blender. Blend until smooth. 

Step two: Pour the strawberry lemonade into popsicle molds. 

Step three: Freeze until firm. Serve and enjoy!

Recipe tips

If you like tangy popsicles, add more lemon juice or less sugar. My sister likes them tangier and I like them sweeter, do whichever you prefer!

Try to get these popsicles into the freezer as soon as possible so they have a nice soft texture when frozen. 

Run the mold under warm water for 10 – 20 seconds to help you release the cover easier. 

If you don’t have a popsicle mold add the strawberry lemonade mixture to paper or plastic disposable cups. Insert a popsicle stick into the center about halfway down the cup. Freeze until hard. When you are ready to eat, cut a few slits into the rim, tear off the cup, and enjoy!

Ingredients

  • 4 cups strawberries fresh or frozen
  • ½ cup lemon juice 4 large lemons
  • ½ cup + 2 tablespoons granulated sugar

Instructions 

  • In a blender add the strawberries, lemon juice, and cane sugar. Blend until smooth. 
  • Pour the strawberry lemonade mixture into popsicle molds. Freeze for at least 4 hours, or until hard. 
  • Whenever you are ready to eat run each mold under warm water for 10 – 20 seconds. Enjoy!
