Strawberry Rice Krispie Treats

Strawberry Rice Krispie Treats are chewy, filled with gooey marshmallows, and tons of strawberry flavor. We are using freeze-dried strawberries to give a berry twist to this classic treat. Everything comes together over the stove in about 20 minutes. This no-bake treat is made with only good-for-you ingredients. It’s a super fun and delicious family favorite dessert perfect for the spring and summer!

What makes this recipe so good

  • They are full of strawberry flavor. Using freeze-dried strawberries is a must if you want your rice krispie treats to taste like strawberries. It’s low fat and easy to get at any grocery store. 
  • Easy no-bake treat.  Rice Krispie treats are made over the stove in about 20 minutes, so no baking is required!

  • Strawberries – Freeze-dried strawberries cannot be substituted with fresh strawberries. Freeze-dried berries are a must to give the rice krispie treats a strong berry flavor. 
  • Vegan marshmallows – You don’t have to use vegan marshmallows but those are the ones we prefer. Just make sure to use mini marshmallows because they will melt more easily. If you only have large marshmallows, break them in half first to speed up the melting process.
  • Butter – Used to melt the marshmallows. We used unsalted but if you want to use salted butter omit the added salt in this recipe. 
  • Rice Krispie cereal – Organic puffed rice cereal is used as a healthier alternative to the name-brand cereal. It only has 3 ingredients and it comes in regular white rice cereal or brown rice cereal. We used the white cereal since the brown rice won’t give your rice krispie treats a pretty pink color. 

How to Make Strawberry Rice Krispie Treats

All ingredients, measurements, and instructions are in the recipe card at the bottom of this post.

  1. Melt butter in a large pot with mini marshmallows, once completely melted stir in vanilla extract, salt and blended freeze-dried strawberries until completely combined. 
  2. Remove the pot from the heat then stir in more mini marshmallows and the rice krispie cereal until completely coated and sticky. 
  3. Pour the cereal mixture into a prepared baking pan quickly press it down evenly without pressing down too hard. Allow to cool then cut into 6 or 9 squares. 

Tips and Tricks

  • Prep everything ahead of time. Rice Krispie Treats will come together pretty quickly so it’s best to measure out everything, blend the freeze-dried strawberries and prep your pan before you start melting the marshmallows. 
  • Work quickly. As soon as the marshmallows are melted and the cereal is added the mixture will start to cool and it will be harder to press down into the pan. It will be hot but try to work as quickly as you can.
  • Don’t overcook the marshmallows. Cook the marshmallows until it’s just melted but not brown otherwise it can become hard and chewy- but not in a good way!
  • Add extra marshmallows or freeze-dried strawberries on top. You can mix in a few extra marshmallows to make your treats extra gooey. Or top your bars with extra mini marshmallows or slightly crushed freeze-dried strawberries for an impressive finish. (Make sure to do this as soon as you put the marshmallows into the pan while it’s still warm.)
  • Use mini marshmallows. They will melt quicker and more uniformly. I used vegan marshmallows but the regular ones will work too.

Frequently Asked Questions  —

Why are my rice crispy treats so hard?

The marshmallows might have been overcooked and started to turn a brown color or you pressed the rice krispies down into your pan too much. It should only be pressed gently so that the bars won’t be too hard to bite into.

Do I have to use freeze-dried strawberries?

No, you can use whatever freeze-dried berry you like. I wouldn’t recommend trying to substitute for fresh strawberries because the extra moisture will ruin the rice krispie treats and the flavor won’t be as strong.

Ingredients

  • 4 tablespoons butter unsalted
  • 4 cups or 12 ounces of mini marshmallows plus ½ cup more mixing
  • ¼ teaspoons salt
  • 1 teaspoon pure vanilla extract
  • 1 ounce freezed-dried strawberries blended (1 ½ cups freeze dried or 4 tablespoons blended) plus more for topping
  • 5 cups rice krispie cereal

Instructions 

  • Measure out all ingredients ahead of time, rice krispies come together quicky so it makes everything much easier.
  • Add freeze-dried strawberries into a blender pulsing until you have a fine powder, then set aside. Grease an 8-inch baking pan with vegetable oil or line with parchmanent paper to make the bars easier to remove later, then set aside.
  • Heat a large pot on medium-low heat with butter, once its mostly melted add in the mini marshmallows. Stir occasionally for 5 minutes or until the marshmallows are completely melted.
  • Remove the pot from the heat then use a large spoon to stir in salt, vanilla extract and the blended freeze-dried strawberries until fully combined. Finally stir in ½ cup of the reserved marshmallows and rice krispie cereal until it’s sticky and fully combined with the marshmallow mixture.
  • Pour the cereal mixture into the prepared baking pan, gently press it out into a even layer, be careful not to press the rice krispie down too much otherwise you’ll have hard rice krispie treats.
  • Allow the rice krispie treats to cool for 30 minutes then cut into 6 – 9 bars.

How To Store/ Make Ahead 
Cover pan with plastic wrap or wrap bars individually, then store on the counter for  3-5 days. 
Don’t freeze or refrigerate.
