Turkey Breakfast Sausage Patties
Turkey breakfast sausage patties are made with ground turkey and homemade spice mix and then pan-fried until perfectly golden brown and crisp on the outside. These juicy turkey patties are more delicious than any store-bought breakfast sausage.

Turkey breakfast sausage patties make a delicious breakfast or brunch served with scrambled eggs and fresh fruit. They are tender, juicy, and well-seasoned with a rich meaty flavor.
I don’t think there is anything better for breakfast than a juicy turkey sausage. These homemade sausages have incredible flavor and they don’t take a whole lot of time to make. In addition to breakfast, these turkey sausages are a great snack or you can crumble them up to add to your omelets or egg bites for more flavor.
Ground turkey is a healthier option compared to beef and if you are using dark meat turkey it can be just as juicy and delicious too!

Recipe Ingredients
- Ground turkey – I used dark meat ground turkey. It has a higher fat content than white meat turkey and it cooks better without being too dry or tough.
- Homemade breakfast sausage seasoning mix – A spice mixture made with ground black pepper, all-purpose seasoning(salt-free), rubbed sage, dried thyme, red pepper flakes, and sea salt.
- Salt – The homemade sausage seasoning already contains salt but when I made these sausage patties I like to add a bit more.
- Oil – I used a bit of olive oil to fry these patties and to give them a nice sear. You can use avocado oil instead if you like.
How to Make Turkey Sausage Patties
All ingredients, measurements, and instructions are in the recipe card at the bottom of this post.
Step one. Heat a large cast iron skillet on medium-high heat with 1 – 2 tablespoons of olive oil.
Step two. Into a large bowl add ground turkey, sausage seasoning, and salt. Mix everything together using gloved hands or a spoon until the seasoning mix is thoroughly combined.
Step three. Shape the meat mixture into 5 – 6 uniform balls then press them out on a sheet pan or a piece of wax paper. Press them a little larger than you want your sausage patties to be because they will shrink as they cook.
Step four. Carefully transfer the patties to the hot skillet leaving 2 inches of space all around each one. Don’t overlap them, work in batches if need be.
Step five. Fry on both sides for 3 – 4 minutes each or until they are well browned with a nice sear. They should have an internal temperature of at least 165 degrees Fahrenheit.
Step six. Serve your homemade turkey sausages with scrambled eggs and biscuit or fruit for breakfast. Enjoy!
What to serve with turkey sausage patties
- Serve for brunch with biscuits, scrambled eggs, beef bacon, or fresh fruit.
- Make a breakfast sausage sandwich with eggs and bacon.
- Add these sausages to your favorite salad or grain bowl.
- Make turkey sausage gravy. Just replace the ground chicken with turkey in this chicken sausage gravy recipe
- Crumble up the meat to add to omelets or egg bites.
Variations
Add a touch of brown sugar or maple syrup if you want to add a bit of sweetness to your sausage patties.
Add more red pepper flakes or cayenne pepper if you want spicy sausages.
Add apples to your sausage mixture to make apple turkey sausages. Just make sure to grate or finely dice the apples so they cook evenly inside of the meat.
Tips and Tricks
- Don’t overcook these patties. Ground turkey can easily become dry and overcooked, so only cook them for just a few minutes per side.
- Divide the sausage mixture into evenly sized balls then press them out to make uniform patties.
- Flatten the patties out a little bit larger than you want, because the meat will shrink up a bit while cooking.
- Rub your hands with a little bit of oil before rolling and shaping the patties so the meat mixture doesn’t stick to your hands as much.
- Use plastic gloves so you don’t have to touch raw meat.

- 1 teaspoon ground sage or 2 teaspoon rubbed sage
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- ¼ teaspoon ground paprika
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 1 pinch cayenne pepper
- ¼ teaspoon crushed red pepper flakes
- 1 – 2 tablespoons olive oil or avocado oil for frying
- Optional
- 1 teaspoon all-purpose seasoning no salt, optional
- ¼ teaspoon fennel seed optional
Instructions
- Start by heating a large cast iron skillet on medium-high heat with 1 – 2 tablespoons of olive oil.
- Into a large bowl, mix together ground turkey, sausage seasoning, and salt with gloved hands or a spoon until the seasoning is wel incorporated.
- Next, divide the sausage mixture into 5 – 6 unifrom balls. Press the meat out a little large than you want because the meat will shrink as it cooks.
- Add the patties carefully to the hot skillet making sure to leave 2 inches of space all around each patty so they get a nice sear. Cook in batches if you need to.
- Fry patties on both sides for 3 – 4 minutes per side or until they are nicely seared and golden brown.
- Transfer the cooked turkey sausage patties to a serving platter. Serve hot with scrambled eggs or homemade biscuits. Enjoy!
