Tomato Galette

Flaky Crust + Fresh Ripe Tomatoes

Recipe Ingredients - All-purpose flour - Butter - Cold Water - Tomatoes - Shredded White Cheddar Cheese - Olive Oil - Black Pepper - Thyme - Salt

Step 1. In a large-mixing bowl, combine your all-purpose flour, salt, and dried thyme.

Step 2. Now cut the butter into the flour until the crumbles are the texture of wet sand.

Step 3. Next add your cold water and stir to combine, then press the crust together and wrap in plastic wrap.

Step 4. Refrigerate for 30 minutes to an hour.

Step 5. Once the dough has chilled, roll it out to a 13-inch circle.

Step 6. Next add a layer of shredded cheese to the center of your crust.

Step 7. Then add a layer of tomatoes.

Step 8. Now sprinkle your galette with thyme, flaky salt, and freshly ground black pepper over the tomatoes, ending with a drizzle of olive oil.

Step 9. Then fold the crust over the tomatoes, to create the rustic galette shape.

Step 10. Finally transfer your galette to a preheated pizza stone and bake for 30-40 minutes at 400°F.

Let it cool for at least 10 - 20 minutes before cutting.
