Use a pair of kitchen shears to remove the backbone.

Use your palm to press the chicken flat, then loosen the skin all around.

Mix together compound butter.

Spread compound butter all over chicken and under the skin.

Bake covered for 1 hour.

Add potatoes then bake covered then increase the heat to brown.
