Creamy Polenta with Greens and Mushrooms

Easy Side Dish!

Recipe Ingredients - Polenta - Spinach - Red swiss chard - Kale - Mushrooms - Olive oil - Garlic - Chicken broth - Water - Butter - Black pepper - Thyme - Salt

Step 1. Bring your chicken broth, water, salt, and dried thyme to a boil then add your polenta. Cook for 15-20 minutes.

Step 2. Once the polenta is cooked, whisk in your butter until smooth and creamy.

Step 3. Sauté your mushrooms and garlic with olive oil. Then add chopped greens. Continue to cook until tender.

Step 4. Finally, serve your sauteed greens on top of your creamy polenta.
