Kale Salad

Vegan Mediterranean Salad

Recipe Ingredients - Kale - Cucumber - Olives - Yellow Bell Pepper - Black Pepper - Lemon Juice - Olive Oil - Red onion - Garlic - Salt

Step 1. Wash your kale and remove the stems. Then roughly chop the leaves and massage them with salt to tenderize them.

Step 2. Now chop your cucumber, tomato, red onion, yellow bell pepper, and olives, and add them to your bowl of kale.

Step 3. Now to make the vinaigrette dressing. Add minced garlic, lemon juice, and olive oil to your kale salad and toss.
