Start by shredding the cabbage and adding the salt to it. Massage the salt into the cabbage for about 2 minutes. Then add the cabbage to a strainer and let it sit for 10 minutes.
In a large mixing bowl add the ground chicken, shredded cabbage, green onion, minced garlic, and ghee. Give the meat mixture a good mix.
Add about a tablespoon of the meat mixture to each wonton wrapper. Wet two of the corners with water, then fold the wonton wrapper into a triangle- closing the seams thoroughly. Repeat with remaining wonton wrappers and meat.
Heat two cast-iron skillets on medium heat with 2 tablespoon of ghee per pan. Once the oil is hot add add a couple of dumplings into the pan and fry on both sides.
Fry until the wonton wrappers are nicely golden brown, about 3 - 4 minutes per side. Repeat until all the dumplings are done.
Return the dumplings to the cast - iron skillets then add ¼ cup of chicken broth to each skillet and immediately cover with a lid.
Allow the dumplings to steam for 3 minutes, then remove the lid and allow all the chicken broth to evaporate.
Cook until all the chicken broth is evaporated and the dumplings are crispy about 2 - 3 minutes.
Serve with your favorite dipping sauce and enjoy!
Notes
If you don't have ground chicken, you can cube 2 large boneless/ skinless chicken breasts and add them to a food processor and pulse for 1 minute. Or you can use ground turkey.
