Store leftovers in the an air tight container in the refrigerator for up 3 - 5 days. Make ahead. To make this salad ahead of time, store chopped veggies and chickpeas in separate storage containers in the refrigerator for up to 2 days. You can prep the olive oil and lemon juice dressing ahead as well by storing it in a separate jar with the salt and pepper. Don’t add salt to the veggies beforehand otherwise they will start to release their juices. When you are ready to serve simply toss everything together.
