Chicken fried rice with cabbage is heavenly. It has fried rice, with perfectly seasoned chicken, scrambled eggs, and sauteed cabbage. It's very flavorful and takes 40 minutes to put together for easy lunches or dinners.

This Asian-inspired dish is a great weeknight meal that you’ll want to make again and again. Chicken fried rice with cabbage can be meal prepped in advance and reheats very well in the oven!
Recipe Ingredients
All ingredients, measurements, and instructions are in the recipe card at the bottom of this post.
Rice
I used white rice in this recipe, but you could also use brown rice. Brown rice is delicious in fried rice because it has a firmer texture than white rice which helps it to hold up better during the cooking process.
You can use leftover rice or make a fresh pot of white rice using your instant pot. I love the way it turns out and the rice has the perfect texture for fried rice.
To make Instant pot rice: Simply add 1 cup of rice and 1 cup + 1 tablespoon of water to the instant pot. Secure the lid, then press the rice button. Set the timer to cook for 12 minutes then allow the rice to stay on the warm setting and release the steam naturally for another 10 minutes.
Liquid Aminos
I discovered liquid aminos last fall and have been using it in my cooking ever since. Liquid aminos is basically soy sauce but it isn't made with wheat so it's gluten-free.
Traditional soy sauce gives me really bad headaches, but I haven’t had that problem when I use liquid aminos.
If you are allergic to soybeans, I wouldn’t recommend liquid aminos, instead try coconut aminos. It's a soy sauce alternative made with fermented coconut nectar. I have a fried rice recipe using coconut aminos if you want to check it out here!
Chicken
I used cubed organic chicken breast for this recipe, but I also love to cube chicken thighs as well!
Chicken thighs add so much flavor to this fried rice. You can cut the chicken off the bones, cube it and use it in this recipe just like the chicken breast, but don’t throw away the bones! You can use the bones to make homemade chicken broth. I’ll link my recipe here if you want to check it out!
Cabbage
Green cabbage adds such delicious flavor to this chicken fried rice, and it is a great way to add more vegetables into your diet!

Chicken Fried Rice with Cabbage

Description

Ingredients
- 2 large eggs, scrambled
- 2 tablespoons unsalted butter or vegetable oil
- Salt and pepper, season to taste
- ¼ cup ghee or vegetable oil
- ½ lb of chicken breast or chicken thighs, cubed
- 1 onion, sliced
- ½ teaspoon dried oregano
- ¼ teaspoon cayenne pepper
- 2 cups cabbage, shredded
- 3 garlic cloves, minced
- 3 cup white or brown rice, cooked ( 1 cup dry rice)
- 3 tablespoons liquid aminos or soy sauce
- Optional - sliced green onions for garnish
Instructions

In a large cast-iron skillet, scramble two eggs in butter or vegetable oil with a pinch of salt and pepper. Set aside.

In the same skillet, heat 1-2 tablespoons of ghee or vegetable oil. Add the onions and saute until they are soft and just starting to brown 5 - 7 minutes. Then add in the cubed chicken, dried oregano, and cayenne pepper. Stir everything together. Continue to cook the chicken until it is browned, 7 -10 minutes.

Next, add the shredded cabbage and minced garlic. Cook until the cabbage has cooked down and become tender, 2 - 3 minutes.

Add in the cooked rice, 2 - 3 tablespoons of ghee or vegetable oil, and liquid aminos or soy sauce. Stir everything together.

Continue stirring frequently and cook until the rice is nice and crispy, adding more oil as neeed. Add in the scrambled eggs.

Serve with sliced green onions. Enjoy!
Notes
Store any leftovers in an air-tight container for up to 3 days in the refrigerator.
Reheat this chicken fried rice covered in a 375-degree oven for 10 - 15 minutes or until warm and heated through.
