Ground Turkey and black bean enchiladas have become my family’s favorite dinner. Tangy enchilada sauce, flavorful ground turkey, black beans, and melty cheese. The perfect dinner served with a side of white rice, maybe some more black beans, chopped tomato, sour cream, and cilantro.
Start by heating a cast iron skillet with 3 tablespoon of vegetable oil / ghee. Once hot add the chopped onion.
When the onion is translucent and just starting to brown, add the ground turkey and cook until browned.
Next add the minced garlic, dried oregano, ground cumin, chili powder, and salt and pepper. Mix the meat and the spices until combined and just starting to smell fragrant, about 30 seconds - 1 minute. Taste for seasoning, adjust if necessary.
Line a 9 x 13 baking dish with parchment paper, and add about ½ - 1 cup of enchilada sauce to the bottom of the pan.
Take a flour tortilla and add a cheese, meat, and black beans down the middle of the tortilla. Roll up the tortilla and place in the baking dish. Repeat with remaining tortillas.
Pour the rest of the enchilada sauce over the top of the tortillas and add remaining cheese over the top.
Bake uncovered in 400F degree oven for 20 - 25 minutes, or until the cheese is melted and golden brown.
Serve with a side of white rice, black beans, sour cream, and cilantro. Enjoy!
