Ground Turkey Enchiladas
Ground Turkey Enchiladas have become my family’s favorite dinner. Tangy enchilada sauce, flavorful ground turkey, black beans, and melty cheese. The perfect dinner served with a side of white rice, maybe some more black beans, chopped tomato, sour cream, and cilantro.

Recipe Ingredients
- Ground Turkey – Ground turkey or ground chicken can be used if you are avoiding red meat and are looking for a lighter meal.
- Spices – I only used three spices – not including salt and pepper. These three spices – dried oregano, ground cumin, and chili powder, while are already in the enchilada sauce, the addition of them again in the meat helps to add more flavor to the meat as well as the final dish.
- Homemade Enchilada Sauce – For this recipe, I used my Homemade Enchilada Sauce, you could also use store-bought if you are in a hurry to make dinner, but if you have some time, I would highly suggest the homemade version to take these enchiladas to the next level.
- Black Beans – 1 – 2 tablespoons of black beans makes these enchiladas more filling and tasty!
- Cheese – I used white cheddar cheese, but regular cheddar or Mexican blend cheese or even Pepper Jack cheese would taste great.
How to Make Ground Turkey and Black Bean Enchiladas
- Start by preheating your oven to 400 degrees Fahrenheit and heating a cast-iron skillet at medium heat on the stove. Once the skillet is hot add 3 tablespoons of vegetable oil/ ghee, then add the chopped onion, cooking until it’s just starting to brown then add the ground turkey. Cook for another few minutes until cooked through and well browned.
- To the meat add the minced garlic and spices- dried oregano, ground cumin, chili powder, salt, and pepper to taste. You want to toast the spices to awaken their fragrance, this takes about 30 seconds to 1 minute. Once the ground turkey and onions are done, remove the skillet from the heat.
- Line a 9 x 13 baking dish with parchment paper then evenly spread out 1 /2 – 1 cup of Homemade Enchilada sauce on the bottom of the pan.
- To the center of a tortilla add a spoonful of ground turkey, black beans, and a sprinkle of cheese. Roll it up then place it in the baking pan, seam side down. Repeat with remaining tortillas and filling.
- Pour the remaining enchilada sauce over the tortillas finishing with the remaining cheese.
- Bake, enchiladas uncovered in the oven until the cheese is bubbly and golden brown.
- Serve with a side of rice, black beans, sour cream, and cilantro. Enjoy!

Ground Turkey Enchiladas
Equipment
- 9×13 baking dish
- Large Cast – iron skillet
Ingredients
- 1 lb Ground Turkey
- ½ cup black beans Cooked and drained
- ½ onion diced
- 1 clove garlic minced
- ½ tsp dried oregano
- ½ tsp ground cumin
- ½ tsp chili powder
- 3 tbsp vegetable oil/ ghee
- 4 – 5 Flour tortillas
- 16 oz Enchilada Sauce
- 16 oz cheddar cheese shredded
Instructions
- Preheat oven to 400F degrees
- Start by heating a cast iron skillet with 3 tbsp of vegetable oil / ghee. Once hot add the chopped onion.
- When the onion is translucent and just starting to brown, add the ground turkey and cook until browned.
- Next add the minced garlic, dried oregano, ground cumin, chili powder, and salt and pepper. Mix the meat and the spices until combined and just starting to smell fragrant, about 30 seconds – 1 minute. Taste for seasoning, adjust if necessary.
- Line a 9 x 13 baking dish with parchment paper, and add about 1/2 – 1 cup of enchilada sauce to the bottom of the pan.
- Take a flour tortilla and add a cheese, meat, and black beans down the middle of the tortilla. Roll up the tortilla and place in the baking dish. Repeat with remaining tortillas.
- Pour the rest of the enchilada sauce over the top of the tortillas and add remaining cheese over the top.
- Bake uncovered in 400F degree oven for 20 – 25 minutes, or until the cheese is melted and golden brown.
- Serve with a side of white rice, black beans, sour cream, and cilantro. Enjoy!
