Linguine with sauteed red cabbage and kale is the perfect vegetarian comfort pasta dish! It has tender sauteed red cabbage and kale with linguine pasta tossed with olive oil, salt, and freshly ground black pepper.
4cupskalechopped with the stems removed (about half a bundle of kale)
2cupsred cabbageshredded
5tablespoonsolive oil
½teaspoonsalt
¼teaspoonfreshly ground black pepper

Instructions
Boil the pasta in a medium-sized pot according to the package instructions.
While the pasta is boiling, saute the red cabbage and kale in a large skillet with olive oil and salt. Cook the cabbage and kale until it is soft and starts to brown, 5 - 7 minutes.
Once the pasta is cooked, drain the pasta and add it to the sauteed cabbage and kale. Mix together, add in the freshly ground black pepper, and taste for seasoning, if necessary. Enjoy!
