This 4 ingredient oven-roasted cauliflower can be meal prepped at the beginning of the week for an easy side throughout the week.
Roasted cauliflower is another recipe that I loved to make when I was a vegetarian. The last recipe I shared - Linguine with red cabbage and kale - was a frequent meal of mine, as was this roasted cauliflower. I would eat almost the whole sheet pan’s worth of cauliflower in one sitting.
IT- IS- JUST- THAT- GOOD!
You can eat the cauliflower as is or you can serve it with roasted beef roast, or with roasted chicken legs. This is a fun and easy side dish that you can make in no time!
How To Make Oven Roasted Cauliflower
Start by preheating your oven to 400F degrees and lining a sheet pan with parchment paper.
Next, rinse your head of cauliflower, and cut it in half. Cut the cauliflower into bite-sized florets.
Spread the cauliflower evenly across the sheet pan. Drizzle over the olive oil or Homemade Ghee, salt, and freshly ground black pepper. Toss everything together to evenly coat the cauliflower florets in the oil.
Cook the cauliflower for 30 - 40 minutes, or until the edges are brown and the florets are fork-tender. Serve and enjoy!

Ingredients

1 large head of cauliflower, about 8 cups chopped

2 tablespoons ghee or olive oil

¼ teaspoon salt

¼ teaspoon freshly ground black pepper
Instructions

Preheat the oven to 400 F degrees. Line a cookie sheet with parchment paper then set it aside.

Rinse and then cut the head of cauliflower in half. Cut the cauliflower into bite-sized pieces.

Evenly spread the cauliflower florets on the cookie sheet, then drizzle the ghee or olive oil over top with salt and freshly ground black pepper. Mix to coat the cauliflower with the oil.

Bake for 30 - 40 minutes, or until the edges of the cauliflower florets are brown and the florets are fork-tender. Enjoy!
Notes
Oven-roasted cauliflower can be meal prepped in advance and reheated in the oven.
Lasts about a week in the refrigerator.
