I love to have chicken salad for a quick lunch on Saturday when I don’t feel like cooking but want something filling and easy. I love to have it with whole wheat crackers or with sliced bell peppers and broccoli sprouts for a healthier option. Or you could make it a sandwich for lunch on the go!
How to Make Classic Chicken Salad
Start by shredding the chicken breast with two forks or a stand mixer using the whisk attachment, then add to a large bowl.
Add the chopped celery, red onion, mayo, salt and pepper, and the juice of half a lemon.
Taste and adjust seasoning, if necessary.
Serve with your favorite crackers or veggies! Enjoy!
