Lamb Breakfast Sausage

Make your own homemade lamb breakfast sausages using ground lamb, breakfast sausage seasoning mix, and salt. They are super easy to make in 20 minutes and taste delicious for breakfast or as a quick filling snack!

Homemade lamb breakfast sausages are the best breakfast or snack! Ground lamb is a delicious switch up from ground beef or turkey. 

Lamb has a nice earthy and slightly gamey flavor that just works so well with the flavors of my favorite homemade mix spice. This blend is one of our family’s favorite seasonings to make and use. You can use it to flavor ground turkey, chicken, beef, or anything you want to taste like sausage! Check out my other sausage recipes for more inspo!

How to Make Lamb Breakfast Sausages:

All ingredients, measurements, and instructions are in the recipe card at the bottom of this post.

Step one. Heat a large skillet on medium-high heat with a tablespoon of oil.

Step two. In a large bowl mix together ground lamb, sausage seasoning, and salt with gloves hands, or a spoon until the seasoning is thoroughly combined.

Step three. Shape the meat mixture into 5 or 6 patties then place them on a baking sheet or plate. Carefully add the patties to the hot skillet leaving leaving 2 inches of space all around. Try not to overlap them,  you might need to work in batches. 

Step four. Cook the lamb sausage patties on each side for 3 – 4 minutes or until well browned with a nice sear.

Step five. Serve your homemade lamb sausage patties with scrambled eggs and biscuits for breakfast. Enjoy!

What to serve with lamb breakfast sausage

Pro Tips

  • Divide the sausage mixture into evenly sized balls then press them out to make uniform patties.
  • Flatten the patties out a little bit more than want, because the meat will shrink up a bit while cooking. 
  • Rub your hands with a little bit of oil before rolling and shaping the patties so the meat mixture doesn’t stick to your hands as much.
  • Use plastic gloves so you don’t have to touch raw meat.

Ingredients

  • 1 lb grass-fed ground lamb
  • 1 teaspoon ground sage or 2 teaspoon rubbed sage
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground paprika
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 pinch cayenne pepper
  • ¼ teaspoon crushed red pepper flakes
  • 1 – 2 tablespoons olive oil or avocado oil for frying

Optional

Instructions 

  • Start by heating a large cast iron skillet on medium-high heat with avocado oil
  • Into a large mixing bowl, add ground lamb, breakfast sausage seasoning mix, and salt. Mix to combine with gloved hands or a spoon. 
  • Next, divide the sausage mixture into 5 – 6 uniform balls, then press them out a little larger than you want because they will shrink as they cook. Transfer the patties to a plate or baking sheet. 
  • Add the patties to the hot oil making sure to leave 2 inches of space all around so they get a nice sear. Fry for 3- 4 minutes per side, or until they are nicely seared and golden brown. 
  • Transfer to a serving platter then serve hot with scrambled eggs, or homemade biscuits for breakfast. Enjoy!

Notes

Storing. Wrap any leftover patties with plastic wrap or in plastic baggies. Store in the refrigerator for 3 – 4 days or in the freezer for several weeks.
Reheating. Reheat the lamb sausage patties in the oven at 375 degrees for 10 minutes or until they are warmed through.
