Beef Breakfast Sausage Patties

These beef breakfast sausage patties are juicy and flavorful. Made with ground beef, homemade breakfast sausage seasoning mix, and a little bit of vegetable oil, these amazing meat patties couldn’t be easier to make!

This recipe for beef sausages is one of those recipes that you need to double or triple because you’ll eat the whole batch in no time! You can meal prep them at the beginning of the week and then reheat them as needed for easy breakfasts or dinners.

My family and I love breakfast sausage and making it at home are super easy. We don’t eat pork so oftentimes we make our own using beef, bison, lamb, chicken, or turkey. Using a homemade breakfast seasoning mix that makes your meat patties taste like sausage, this easy, delicious, and comforting breakfast can be made at any time. Served with scrambled eggs, buttered toast, and or fried plantains and orange juice!

Ground beef – You could also use bison! Try to find good quality meat. We usually opt for organic or pasture-raised meat without any hormones or antibiotics. 

Sausage seasoning mix – I make mine from scratch. I’ll link my recipe here! I use 3 tablespoons of this seasoning mix per pound of meat. You could also use a store-bought seasoning if you like!

Oil – used for frying the sausage patties. We usually buy 90% lean beef, so I cook the patties in a little bit of oil so they fry up nicely. If you’re using 85 or 80% beef, I wouldn’t recommend cooking them with oil because the meat has enough fat in it to cook the patties well. 

How to Make Homemade Beef Breakfast Sausage Patties :

Step one: To a large bowl, add the ground beef and sausage seasoning mix. Using your gloved hands or a spoon, mix until all the seasonings have been well incorporated into the meat. 

Step two: Divide the meat into 6 – 7 roughly uniform patties. 

Step three: Preheat a large cast iron skillet with a little bit of oil. Fry the patties until they are well done and seared on both sides, cooking for 3 – 4 minutes per side. 

Step four: Serve with your favorite breakfast sides. Enjoy!

Cooking and storing tips

Properly preheat the skillet – Make sure the pan is hot before adding the sausage patties. This way they will get a nice sear and crispy edges. 

Use gloves to mix the meat – If you don’t like touching raw meat, grab a pair of disposable gloves to mix the meat with the seasonings and shape it into patties.

The meat patties will shrink while cooking – Make the patties a little larger than you want them because they will shrink as they cook. 

Storing – Store in an air-tight container for 3 – 5 days in the refrigerator or in the freezer for several weeks. 

Reheating – Reheat in the oven for a few minutes until hot, or covered on the stove so they don’t dry out.

Toast with lots of butter and/or jelly or honey

Buttermilk biscuits or buttermilk pancakes

Mashed potatoes, if serving for dinner it tastes lovely with potatoes and gravy!

Fried plantains, I love fried plantains and eat them for breakfast lunch, dinner, and snacks!

Orange juice, there’s nothing like a cold glass of organic orange juice in the morning with breakfast!

Is Italian sausage the same as breakfast sausage?

No, because they are made of very different seasonings. Italian seasoning contains seasonings common to Italian cooking such as dried basil, parsley, thyme, rosemary, oregano, and marjoram. Breakfast sausage seasoning contains dried sage, fennel, red pepper flakes, and brown sugar.

  • 1 lb ground beef or bison
  • 1 teaspoon ground sage or 2 teaspoon rubbed sage
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground paprika
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 pinch of cayenne pepper
  • ¼ teaspoon crushed red pepper flakes
  • 2 tablespoons vegetable oil

Instructions 

  • In a large mixing bowl add the ground beef and homemade breakfast sausage seasoning. Using gloves, mix everything together very well until they aren’t any pockets of seasonings. 
  • Heat a large cast iron skillet on medium-high heat until hot. Add the vegetable oil, then form the meat into patties, you should get about 6 or 7.
  • Cook the patties for  3-4 minutes per side until cooked through and seared on both sides.
  • Serve with your favorite breakfast sides! Enjoy!
